I am totally hooked on spaghetti squash these days. This may be the first time I've ever become obsessed with something healthy! But it's so easy to cook and fun, too. The best part is fluffing out the strands after it's done. I'm keeping it simple, naturally. I just cut the squash in half, lengthwise, scoop out the seeds and guts, lay it cut side down on a plate, cover it loosely with plastic wrap and microwave for seven minutes. (I'm buying the really small ones - 2 lbs, I think)
Next, I dress it up with salt, pepper, spray butter and parmesan cheese. The last two times I've made it I sauteed mushrooms in butter with chopped garlic. Very yummy. Makes a huge plateful of guilt-free deliciousness. I don't have to share either.
I'm thinking of taking it up a notch next time with some freshly grated parmesan or romano. Also, since I'm trying to stay healthy and lo-cal, maybe I will saute some zucchini along with the mushrooms. I can try out the julienne feature on my mandolin. Fun!
